Toffee Pecan Cookies

Toffee Pecan Cookies are a crunchy, chewy treat to be savoured. Add some chocolate chips and you then have a turtles cookie.

Take some into work with you. Share them with your co-workers at coffee time.

Toffee Pecan Cookies Recipe


1 cup unsalted butter at room temperature

1/4 cup granulated sugar

3/4 cup firmly packed brown sugar

1 large egg at room temperature

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 1/2 teaspoon vanilla

1 1/2 cups coarsely chopped pecans

1 cup toffee chips


Preheat your oven to 350F degrees.

Toast the pecans by placing them evenly on a baking sheet and placing them in the pre-heated oven for 15 minutes or until lightly browned.

Prepare baking sheets by lining them with parchment paper.

In a medium mixing bowl, blend together flour, baking soda and salt.

In a large mixing bowl, cream the butter, and sugars until smooth and creamy.

Add the egg and the vanilla then beat until fully combined.

Mix in the dry flour mixture to the sugar mixture and mix thoroughly.

Add the toasted pecans and toffee chips and mix until fully incorporated.

Drop the cookie dough by heaping teaspoons full at least 2 inches apart on the prepared baking sheets.

Place the cookie sheets into the oven and bake for 10 to 12 minutes. Bake just until the edges are firm but not darkening.

Remove the Toffee Pecan Cookies from oven. Leave the cookies on the baking sheets for 5 minutes to set. Then transfer the cookies to the wire cooling racks until cooled completely.


This dough freezes well. Wrap the dough tightly with plastic wrap. When ready to bake; remove the dough from the freezer and allow the dough to thaw for one hour. Bake as per the instructions.
