Pumpkin Bread

Pumpkin Bread is an excellent use of all those pumpkins every fall. Enjoy the smell of the warm pumpkin when it comes out of the oven, so warm and inviting.

Add raisins, spices, chocolate chips, pecans, fruit, or walnuts to change this recipe to your taste. This loaf freezes well once baked. It makes an excellent house warming gift for a new neighbor. Wrap the loaf in a new clean napkin or dish towel, and tie it up with a bow. At Christmas wrap it in colored foil and place a bow on top. Makes a great addition for any school bake sales. You can easily double the recipe. Great for that last minute Christmas or house warming gift.

This recipe will make three loaves.

3 cups canned pumpkin puree

1 1/2 cups vegetable oil

4 cups white sugar

6 eggs

4 3/4 cups all-purpose flour

1 1/2 teaspoons baking powder

1 1/2 teaspoons baking soda

1 1/2 teaspoons salt

1 ½ teaspoon cardamom

1 1/2 teaspoons ground cinnamon

1 1/2 teaspoons ground nutmeg

1 1/2 teaspoons ground cloves

Preheat the oven to 350 degrees F (175 degrees C).

In a large bowl, mix together the pumpkin, oil, sugar, and the eggs. Continue mixing until fully blended.

In a medium bowl combine the flour, baking powder, baking soda, salt, cinnamon, nutmeg, cardamom, and cloves.

Add the flour mixture to the pumpkin mixture and stir until well blended.

Grease and flour three 9x5 inch loaf pans.

Divide the batter evenly between the prepared pans.

Bake the Pumpkin Bread loaves in the preheated oven for 45 minutes to 1 hour. The top of the loaf should spring back when lightly pressed.

Remove the Pumpkin Bread loaves from the oven and transfer the loaves to a cooling rack or a clean dry cloth.

Allow to cool completely before slicing or this bread may crumble.

Once cooled completely wrap in plastic wrap and store in the refrigerator for up to one week.

You may also wish to freeze the extra loaves by wrapping in several layers of plastic wrap and placing the loaves in the freezer. Will keep for up to three months. Allow to thaw completely prior to serving.

This loaf makes very tasty toast for breakfast. It also makes your kitchen smell wonderful while it is taosting. I like to serve my toast with butter and honey... so good.
