Lemon Bars for when you want something sweet with a bite. A real crowd pleaser at bake sales. A plate these squares presented to new neighbours will put a huge smile on their faces.

Elegant enough to serve after even your fanciest dinner parties, yet easy enough to whip up for that afternoon tea.



1/2 pound of room temperature unsalted butter

1/2 cup of sugar

2 cups of all-purpose flour

1/8 teaspoon of salt


6 room temperature extra-large eggs  

3 cups of sugar

2 tablespoons of fresh finely grated lemon zest

1 cup of fresh lemon juice

1 cup of flour

Confectioners' sugar, for dusting the bars


Preheat your oven to 350 degrees F.


With an electric mixer fitted with the paddle attachment, set on medium, cream the butter and sugar until light and fluffy.

Set the mixer on low and mix the flour and salt into the butter mixture until just combined.

Place the dough into a 9x13x2 baking pan. With floured hands flatten the dough over the bottom of the pan and up the sides of the pan 1/2 an inch. Place the baking pan in the refrigerator until fully chilled.

Place the chilled crust in the oven and bake for 15 to 20 minutes. The crust should be a light golden brown. Remove from the oven and place the baking pan on a wire rack to cool. Do not turn off the oven.


In a bowl whisk or mix together the eggs, sugar, lemon zest, lemon juice, and flour. Pour this mixture over the crust. Return the baking pan to the oven and bake for 30 to 35 minutes. It is done when the filling is set.

Remove the Lemon Bars from the oven. Place the baking pan on a wire rack to cool.

Once the Lemon Bars are cool to room temperature cut them into bars and sprinkle with the confectioners' sugar.

Place on a plate and enjoy.

These may be stored in a tightly sealed container in the refrigerator or wrapped frozen for future use.
