Hot Dog Buns New England Style

New England Style Hot Dog Buns are my favorite hot dog bun. They are easy to toast and open at the top. This makes them very easy to add condiments.

This recipe will make 10. If you wish you may wrap any unbaked dough in several layers of plastic wrap. Then place them in the freezer until needed.  Let thaw fully before baking. After baking they will keep for several days wrapped in platic wrap or in a bread bag.

These are great at family gatherings or wiener roasts. Your family and friends will love them

You may wish to bake these in a New England Hot Dog Bun Pan as it makes the buns the perfect shape. Or you may bake them in an 8 inch cake pan and cut them after baking.

Cooking Time: 23 minutes approximately


1 cup warm water not hot

2 tablespoons butter softened

3 cups all-purpose flour approximately

2 tablespoons of sugar

1/4 cup of dry milk powder

2/3 cup of dry instant mashed potatoes

1 1/2  teaspoons of salt

1 egg

2 teaspoon of active dry yeast


Pre-heat oven to 375 F

In a small bowl, combine water, sugar, and yeast. Stir until dissolved.  Let the yeast mixture rest for about 5 minutes, or until yeast is bubbly.

In a large bowl mix the flour, dry milk powder, potato flakes, and salt.

When the yeast mixture is bubbly add it to the flour mixture. Add the butter and egg. Continue mixing until the dough is smooth and shiny. You made need more or less flour.

Turn the dough out onto lightly floured surface and knead for approximately 8 minutes.

Place the kneaded dough into a large oiled bowl and rotate dough until all of it has been lightly coated in oil. Cover with damp warm cloth and let rise in warm, draft free place for about 3/4 hour or until double in size. I like to place it on the top of my stove as it pre-heats.

Once the dough is double in size punch it down in the bowl. Turn dough out onto lightly floured surface and knead for 5 minutes.

Now shape the dough into the shape of your pan. Once the dough is shaped place it into your baking pan and push the dough until the bottom of the pan is covered. Cover with an oiled heavy baking pan as this will make the buns flat for the bottoms. Allow to the dough to raise until almost to the top of your hot dog pan.

Leave the heavy baking pan on top. Place your buns in the pre-heated oven for 18 minutes. Remove the top heavy baking pan and continue baking for 5 more minutes.  Bake your New England Style Hot Dog Buns until the crust is golden brown. 

Remove the buns from the oven. Allow to cool in the pan.

Once the buns are cool remove from the baking pan and cut into hot dog buns. Next slice each bun almost to the bottom.
