Honey Oatmeal Bread is one of the easiest loaves to make. It has the light taste of honey and is speckled with yellow millet, and sunflower seeds. It has a mild nutty flavor due to the addition of the sunflower seeds.

This dough freezes well. Just remember to thaw completely before baking.

The baked loaves also freeze well so make a double batch so that you always have lots on hand.

This loaf can be served with peanut butter and honey, or used in your favorite sandwich. It is unbelievably good toasted.


Makes 2 loaves


1 cup rolled oats

11/3 cups boiling water

2 teaspoons salt

1 tablespoon butter

1/2 cup honey

2 envelopes active dry yeast

1/2 cup warm not hot water

1 teaspoon sugar

1/4 teaspoon ground dried ginger

1/2 teaspoon ground cardamom

51/2 cups unbleached white flour, divided

2 tablespoons raw sunflower seeds

2 tablespoons millet


Place the oats in a medium size metal mixing bowl. Pour the boiling water over the oats.

Stir in the salt, butter, and honey.

Cover with a damp clean cloth and let rest for 1 hour.

When the above mixture is almost ready put the yeast into a small bowl and add the warm water. Then stir until yeast is completely dissolved. Add the sugar, cardamom, and ginger, and set in a warm, draft-free place until the yeast begins to bubble.

In a large mixing bowl combine the yeast mixture with 5 cups of the flour. Mix until fully incorporated.

Add the oatmeal mixture, the millet, and the sunflower seeds, and mix until fully blended.

Turn dough out onto a lightly floured board and dust it with the remaining 1/2 cup flour.

Knead for 8 to 10 minutes, until the dough is smooth and elastic.

Form the dough into a ball and place it in a lightly oiled bowl. Turn the dough to oil all sides. Cover with a warm, clean, damp, cloth and let rise in a warm draft free place until doubled, about 1 hour.

Bruch two 9 inch by 5 inch loaf pans with melted butter.

Punch down the dough and knead for 2 minutes.

Divide the dough two equal pieces and form into two loaves.

Place the loaves in the pans.

Cover with a warm, clean, damp, cloth and let rise in a warm draft free place until double in size.

Preheat oven to 375 degrees F.

Place the loaves in the oven and bake 40 minutes.

The Honey Oatmeal Bread will be golden brown and the loaf will sound hollow when thumped.

Remove the Honey Oatmeal Bread from the oven and turn out of the pans onto a wire cooling rack.
