Cinnamon Spins

Cinnamon Spins are best served warm.  They are very much like a cinnamon roll but with a slight almond flavor. You may make this a day ahead and the microwave them for about 20 seconds before serving.  Guest will love them when served with coffee. This recipe makes 18.


2/3 cup warm (not hot) milk

2 teaspoons active dry yeast

2 large eggs at room temperature

1/4 cup sugar

2 1/2 – 3 cups all-purpose flour

1/2 teaspoon salt

1/3 cup melted butter


1/2 cup softened butter

1/2 cup packed brown sugar

2 teaspoons cinnamon

2/3 cup finely ground almonds (almond meal)


Preheat your oven to 350F.

Lightly grease your muffin tins.

Mix together the yeast, milk, eggs and sugar in a medium bowl until fully combined.

In a bowl sift together the flour, and salt. Mix in milk mixture and the melted butter. Continue mixing until it forms a smooth dough.  

Once fully mixed turn the dough out onto a lightly floured surface and knead the dough for about 10 minutes. The dough should be smooth and elastic.

Place the dough into a lightly oiled bowl and turn to coat in oil. Place a warm damp clean dish cloth over it and place the bowl in a warm draft free place to rise. When the dough is double in size (about 1 1/2   hours) it is ready.

Turn the dough out onto a lightly floured surface and roll it out to 18 inch X 10 inch rectangle.

Mix all of the filling ingredients together until fully combined.

With the long side of the dough closest to you spread the filling mixture onto the dough to within 1 inch of the long edge closest to you. Spread the filling mixture to all the way to the end of the other three edges.

Starting with the long edge that is closest to you roll until the dough into a log.

Cut the dough into 18 equal pieces.

Place each Cinnamon Spin into the lightly greased muffin tins.

Cover the muffin tins with a damp warm clean dish towel and place in a warm draft free place to rise. This will take about 45 minutes.

Once the Cinnamon Spins are ready place them in the oven and bake for 20 to 25 minutes or until golden brown.

Remove from the oven and remove from the muffin tins. Place on a wire rack to cool slightly.
