Chocolate Chocolate Chip Cookies are a wonderful treat any time. With double the chocolate than plain chocolate chip cookies they are a sure crowd pleaser.
These are very easy to prepare and make wonderful gifts wrapped up in a basket topped with a bow.
The better the quality of chocolate that you use the better the finished cookie will be.
5 tablespoons unsalted butter at room temperature
5 tablespoons vegetable shortening at room temperature
1 cup granulated sugar
1 large egg at room temperature
1 cup all-purpose flour
6 tablespoons unsweetened cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla
1/2 cup miniature chocolate chips (try white chocolate chips for a change or half of each)
1 tablespoon granulated sugar for sprinkling on top
Preheat your oven to 350F degrees.
Prepare baking sheets by lining them with parchment paper.
In a medium mixing bowl, blend together flour, cocoa powder, baking powder and salt.
In a large mixing bowl, cream the butter, vegetable shortening, and sugar until smooth and creamy.
Add the egg and the vanilla then beat until fully combined.
Mix in the dry flour mixture to the sugar mixture and mix thoroughly.
Add the miniature chocolate chips and mix until fully incorporated.
Drop the cookie dough by heaping teaspoons full at least 2 inches apart on the prepared baking sheets.
Sprinkle with granulated sugar.
Place the cookie sheets in the refrigerator and allow to cool for at least 20 minutes.
Remove the cookie sheets from the refrigerator and place the cookie sheets into the oven and bake for 10 to 12 minutes. Bake just until the edges are firm but not darkening.
Remove the Chocolate Chocolate Chip Cookies from oven. Leave the cookies on the baking sheets for 5 minutes to set. Then transfer the cookies to the wire cooling racks until cooled completely.
These cookies are just like the traditional chocolate chip cookie… only better. They have more chocolate.
They are a perfect snack for the kids with a glass of milk. Adults will enjoy them as well with their afternoon coffee.
Make some today for your family, but try not to eat them all before they cool.
This dough freezes well. Wrap the dough tightly with plastic wrap. When ready to bake; remove the dough from the freezer and allow the dough to thaw for one hour. Bake as per the instructions.
