Chocolate Chili Brownies have the sweetness of chocolate with the addition of just a little heat.
Surprise your guests with something different tonight.
4 large eggs
1 cup granulated sugar
1 cup light brown sugar, lightly packed
4 ounces melted butter
1 1/4 cups cocoa, sifted
1 vanilla bean or 1 tbsp. vanilla powder
1/2 cup all-purpose flour, sifted
1/2 tsp. sea salt
3 tbsp. Chili Powder
softened butter for greasing the baking pan
flour for dusting the baking pan
Pre-heat your oven to 300 F.
Butter and then flour an 8 inch square baking pan.
In a stand mixer with a whisk attachment, beat the eggs at medium speed until light and fluffy.
Add the granulated and light brown sugars. Mix until the sugars are fully incorporated into the eggs.
Remove the vanilla from the vanilla beans by cutting them lengthwise and scrape seeds out with the back of a knife, discard the empty pod.
Add remaining ingredients including the vanilla to the egg mixture.
Mix until fully combined, scraping down bowl twice during mixing.
Pour the brownie mixture into the buttered and floured baking pan and bake for 45-55 min, or until a toothpick inserted into the center comes out clean.
When done remove the brownies from oven and place on a cooling rack until fully cooled. The brownies must be cool before frosting or the frosting will melt.
While the brownies cool prepare the frosting.
1/2 cup butter
2/3 cup cocoa powder
3 cups powdered icing sugar
1/3 cup milk
1 teaspoon vanilla extract
Melt the butter in a small sauce pan.
When the butter is melted, stir in the cocoa powder.
Alternately add 1/3 of the powdered icing sugar and 1/3 of the milk, beating to spreading consistency.
Once all of the powdered icing sugar, and milk have been added mix in the vanilla extract.
Continue to mix until creamy smooth.
Spread frosting over the top of the Chocolate Chili Brownies and slice into bars.
Keep leftover brownies tightly covered at room temperature, or freeze for later use.
You may freeze your brownies either individually or as one large square. Wrap in several layers of plastic wrap and place in the freezer. When needed place the frozen Chocolate Chili Brownie on your counter at room temperature for 30 minutes. If you froze the brownies in one large square, cut into slices before serving.
