Caramel Apple Muffins are a treat even Grandma would approve. With the taste of caramel apples who can resist it. If you love caramel apples then you will love these muffins.
2 cups all-purpose flour
3/4 cup sugar
2 teaspoons baking powder
2-1/2 teaspoons ground cinnamon
1 teaspoon ground cardamom
1/2 teaspoon salt
1 cup milk
1/4 cup melted butter
2 teaspoons vanilla extract
1/2 cup peeled and chopped tart apple such as Granny Smith
12 caramels, chopped
Pre-heat your oven to 350F.
In a large mixing bowl, combine the flour, sugar, baking powder, cinnamon, cardamom, and salt until completely mixed.
In small mixing bowl, whisk the egg, milk, butter and vanilla together until fully blended.
Stir the egg mixture into the flour mixture just until fully moistened. You still want lumps in your muffin batter.
Fold the chopped apples, and the chopped caramels into the muffin batter.
Fill paper lined muffin cups three-fourths full with the batter.
1/2 cup packed brown sugar
1/4 cup quick-cooking oats
3 tablespoons melted butter
1 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
In a small mixing bowl combine all of the topping ingredients.
When fully combined sprinkle evenly over the tops of your batter.
Place the filled muffin tin into the pre-heated oven on the middle rack.
Bake for 20-25 minutes or until a toothpick inserted into the muffin comes out clean.
When done remove the muffin pan from the oven and place onto a cooling rack for 5 minutes before removing them from the muffin tin.
After 5 minutes remove the muffins from the tin and place them onto the cooling rack.
These muffins are best served warm.
