Butterscotch Potato Chip Cookies

Butterscotch Potato Chip Cookies are easy to make. They taste sweet, and salty with just a little crunch.

These cookies freeze well and will thaw in only a few minutes. Keep plenty in the freezer for when you get the munchies.

They are a very welcome gift when presented in a collector tin lined with tissue paper and topped with a bow.


1 cup room temperature butter

3/4 cup sugar

3/4 cup packed brown sugar

2 eggs

2 cups all-purpose flour

1 teaspoon baking soda

2 cups crushed potato chips

1 cup butterscotch chips


Preheat your oven to 350F degrees.

Line your baking sheets with parchment paper or silicone liners.

In a large mixing bowl; cream together the butter, brown sugar, and sugar, with an electric mixer on medium-high speed until light and fluffy.

Beat in the eggs into the sugar mixture.

In a medium mixing bowl, stir together flour and baking soda.

Slowly add the dry flour mixture to the sugar mixture and mix well.

Stir the potato chips, and butterscotch chips into the dough. Continue to stir until fully combined.

Drop the cookie dough by full tablespoon about 2 inches apart onto prepared baking sheets.

Place the full baking sheet into the oven.

Bake the Butterscotch Potato Chip Cookies until they are a light golden brown. This should take between 10 to 12 minutes.

Remove your Butterscotch Potato Chip Cookies from the oven.

Allow the cookies to set on the baking sheet for a few minutes to firm up before transferring them to a wire rack to cool completely.

This cookie dough freezes well. Scoop the cookie dough into 1 tablespoon size drops and place in the freezer on a cookie sheet. Once they are frozen place the cookie dough drops into a freezer bag. Store the frozen cookie dough drops in the freezer until needed. When you wish to bake the cookie dough drops remove them from the freezer and place onto a baking sheet. Allow to thaw for 15 minutes prior to baking. Bake as per the instructions above.

A slightly chewy cookie that is a real treat for the kids after school. Pack some in your lunch for that mid-afternoon coffee break.

These cookies are quick and easy to prepare. This makes them perfect for your next bake sale or farmer’s market.
