Banana Bread with a healthy difference. An easy way to sneak a few vegetables into your family’s diet. Delicious served warm or cold.

Add raisins, spices, chocolate chips, pecans, fruit, or walnuts to change this recipe to your taste. This loaf freezes well once baked. 

It makes an excellent house warming gift for a new neighbor. Wrap the loaf in a new clean napkin or dish towel, and tie it up with a bow. At Christmas wrap it in colored foil and place a bow on top. Great for that last minute Christmas present.

For a something special in that boring bag lunch try this bread sliced thick and spead with peanut butter and jelly.

Great to pack for long hikes of bike rides. Provides that extra little energy boost.

This recipe makes two loaves.

Banana Bread Recipe


3 eggs

1 cup vegetable oil

2 teaspoons vanilla extract

3 cups flour

1 1/3 cups sugar

1 teaspoon baking soda

1/2 teaspoon baking powder

1 teaspoon cinnamon

1 teaspoon cardamom

1/2 teaspoon ginger

1/4 teaspoon cloves

1/2 cup shredded carrot

1/2 cup mashed over ripe bananas

1 cup grated zucchini


Pre-heat your oven to 350 degrees.

In a large bowl mix together eggs, oil, and vanilla.

Add the flour, sugar, baking soda, baking powder, cinnamon, cardamom, ginger, and cloves. Mix together until fully blended.

Gently stir in the bananas, carrots, and zucchini and combine well.

Grease and flour two loaf pans.

Pour equal amouts of dough into each loaf pan.

Place the loaf pans in the oven and bake at 350 degrees for 50 - 60 minutes. The loaves will be firm to the touch when they are done.

Allow the loaves to cool in the loaf pans for 10 minutes before removing from pans.

This loaf is very nice served as toast with breakfast. For something different use this loaf to make French Toast for your familys next sunday brunch. Use your imagination and and add this vegetable rich dish to your familys regular diet... they will never know that it is good for them.

Wrap your fresh cooled loaf in plastic wrap and store in the refrigerator for up to one week.

Banana Bread may also be frozen for future use. To freeze wrap in several layers of plastic wrap and label. It will keep for up to three months. Allow to fully thaw prior to serving.
