These Blueberry Bars are so made easy by using a pre-packaged yellow cake mix. This recipe is so simple and fast.
This is so pretty to look at when displayed.
The cream cheese layer is so creamy smooth. Add to that the flavor of blueberries and you have a taste of heaven right in your kitchen.
I make these for my grandchildren when they come to visit. It is the first thing they look for after they give me a big hug. They will eat as many as I allow and their parents are close behind.
They keep very well in the freezer stored in a freezer container.
1 - 18 ounce package yellow cake mix
1/2 cup melted butter
1 - 8 ounce package cream cheese
1 - 21 ounce of Blueberry Pie Filling
2 1/2 cups confectioners’ sugar
3/4 cup flaked coconut
3/4 cup chopped walnuts, almonds or pecans (may be omitted)
Preheat oven to 325F
In a mixing bowl, blend together the yellow cake mix, melted butter and 1 of the eggs.
Once this is fully mixed pat this mixture into a buttered 15" x 10" baking pan.
In a mixing bowl beat the cream cheese until fluffy.
Blend the remaining 2 eggs and the sugar into the cream cheese.
Pour the cream cheese mixture over the cake mixture.
Spoon the 18 ounce can of blueberry pie filling over the top of the cream cheese mixture.
Next sprinkle the pie filling with the flaked coconut.
Top the flaked coconut with the nuts of your choice.
Bake at 325°F for 45 minutes or until lightly browned.
Cool completely and cut into bars.
Serve these easy Blueberry Bars to the happy smiling faces.
They will keep coming back for more.
