White Chocolate Pecan Bars

White Chocolate Pecan Bars are quick and easy to make and freeze well. They thaw in only about 15 minutes so they are perfect for unexpected guests.

White Chocolate Pecan Bars Recipe

Ingredients:

Bottom:

1 cup unsalted butter, at room temperature

1 cup firmly packed brown sugar

2 cups all-purpose flour

1/2 teaspoon salt

1 teaspoon vanilla extract

1 large egg at room temperature

1/2 cup chopped toasted pecans

Instructions:

Preheat tour oven to 350F degrees.

Be sure that you position one of your oven's racks in the center of your oven.

Toast a total of 1 cup of pecans (1/2cup to be used for topping) by placing them evenly on a baking pan and placing them in the oven for 15 minutes or until lightly browned.

Prepare a 13 X 9 baking pan by greasing it and the dusting the pan with flour.

In a medium mixing bowl, whisk together the flour, and salt until well combined and set aside.

In a large mixing bowl, beat with an electric mixer the butter, sugar, and vanilla extract.  Continue to beat on medium speed until light and fluffy. Scraping down the sides of the bowl with a rubber spatula until everything is well blended.

Add egg to the sugar mixture, beating and scraping down the sides of the bowl again until fully blended.

Once the sugar mixture and egg are fully combined gradually beat in the flour mixture until incorporated.

Stir in the toasted pecans into the dough with a wooden spoon. Stir until they are evenly distributed.

Onto the prepared baking pan spread the dough evenly to the edges of the baking roll pan.

Place the baking pan into the oven.

Bake the White Chocolate Pecan Bars for 22 - 25 minutes or until the edges of the bars are light golden brown.

Remove the baking pan from the oven.

Topping:

1/2 cup chopped toasted pecans

1 1/2 cups coarsely chopped white chocolate

 

Immediately sprinkle the chopped white chocolate on top. Allow to cool for 5 minutes. Then spread the melted white chocolate to cover the entire top. Sprinkle with the chopped toasted pecans.

Allow to cool until they have reached room temperature or overnight. The white chocolate should be firm prior to cutting the bars.

Cut into bars and serve.

These make a wonderful surprise packed into anyones lunch.

Keep in an airtight container to store for a few days. Freeze if not eaten within a few days.
