Tiramisu Cheesecake

Tiramisu Cheesecake has the rich flavour of coffee mixed with the creamy texture of cheesecake.



Tiramisu Cheesecake Recipe

Crust:

Ingredients:

44 Nilla wafer cookies

2 teaspoons instant coffee powder

2 tablespoons hot water

Instructions:

Pre-heat your oven to 325F.

Line a 13 inch X 9 inch cake pan with tin foil.

Spread the 44 Nilla wafer cookies evenly on the bottom of the prepared cake pan. Mix the instant coffee with the hot water and brush half of the coffee over the Nilla cookies in the bottom of the cake pan. Set the remaining coffee aside.

Set aside.

Filling:

Ingredients:

4 8 ounce packages of cream cheese at room temperature

1 cup sugar

4 eggs

1 cup sour cream

3 teaspoons instant coffee powder

1 tablespoon hot water

44 Nilla wafer cookies

Instructions:

In a large size mixing bowl beat the room temperature cream cheese on medium speed until it is creamy smooth.

Continue beat the cream cheese and add the sour cream. Continue to beat the cream cheese mixture until the sour cream has been incorporated.

On low speed add the eggs one at a time and beat just until blended. Do not over-beat.

Dissolve the instant coffee powder into the hot water.

Into a medium size mixing bowl place 3 1/2 cups of the cream cheese mixture. Mix until fully blended.

Spoon the cream cheese/coffee mixture over top of the Nilla cookies in the cake pan.

Spread the 44 Nilla wafer cookies evenly on the top of the cream cheese/coffee mixture. Brush Nilla cookies with the reserved coffee from the crust layer.

Spoon the remaining cream mixture over the Nilla cookies.

Place the baking pan into the pre-heated oven and bake for 45 minutes or until the center is almost set.

Remove the baking pan from the oven and place on a wire rack to cool completely.

Topping:

1 cup thawed cool whip topping

2 tablespoons unsweetened cocoa powder

Spread the thawed cool whip topping evenly over the cooled cheesecake. Dust with the unsweetened cocoa powder.

Tip: I also like to place a chocolate coated coffee bean on each piece of cheesecake just before serving.

Place in the refrigerator for at least 4 hours or overnight.

When you are ready to serve your cheesecake remove the baking pan from the refrigerator and lift the sheet of cheesecake from the baking pan to a cutting board. Cut into desired pieces and serve.

Tiramisu Cheesecake freezes very well. Freeze individually or in slabs. Wrap well in plastic wrap and place in the freezer. To thaw remove the cheesecake from the freezer and allow to sit at room temperature for 15 minutes.

This cheesecake is perfect for after dinner with coffee.
