No Bake Strawberry Cream Cheesecake

Strawberry Cream Cheesecake is a no-bake that is much is a lighter than the normal baked cheesecake. With its chocolate chip crust your family will love it.

Serve this cheesecake chilled with that morning or afternoon coffee.

This cheesecake is also wonderful to serve during those hot summer days. It is so cool and refreshing.



No Bake Strawberry Cream Cheesecake Recipe

INGREDIENTS:

CRUST:

400g package chocolate chip cookies (you may also use chocolate wafer crumbs if desired)

125g butter, melted

FILLING:

500g cream cheese, softened

3/4 cup caster sugar

3 cups whipped cream

1 tablespoon gelatine

1/4 cup boiling water

GARNISH:

65g box strawberry jelly crystals

1 tablespoon gelatine

1 cup boiling water

200ml ice cold water

1 pint fresh strawberries

INSTRUCTIONS:

CRUST:

With a food processor or in a heavy plastic bag with a rolling pin crush the chocolate chip cookies until they become small crumbs. Add the melted butter to the crumbs and stir to combine fully.

Press the chocolate chip cookie mixture in to the base and up the sides of a 20 cm spring form cake pan.

Place the spring form pan into the refrigerator and refrigerate until needed.

FILLING:

Using an electric mixer set on medium; beat the cream cheese and sugar until smooth and light.

Add the cream to the cream cheese mixture and combine fully.

In a small mixing bowl or cup; sprinkle the gelatine over the top of the boiling water and whisk with a fork until it has been dissolved.

Beat the gelatine into the cream cheese mixture and continue beating until fully incorporated.

Pour the cream cheese mixture over the top of the prepared crust and spread evenly.

Return the cheesecake to the refrigerator.

Allow the cheesecake to set overnight.

GARNISH:

In a medium size mixing bowl whisk together they strawberry jelly crystals, gelatine, and the boiling water until the strawberry jelly powder and gelatine are completely dissolved.

Add the ice cold water to the strawberry jelly mixture and mix until fully blended.

Place the bowl into the refrigerator and refrigerate until it is just starting to set.

Cut the fresh clean strawberries in half.

Arrange the strawberry halves around the outside edge of the completely chilled cheesecake.

Then very carefully and gently as to not disturb the strawberries, pour the almost set strawberry jelly over the top of the cheesecake.

Return the Strawberry Cream Cheesecake to the refrigerator until it has set completely.

When ready to serve you may wish to place a dollop of fresh whipped cream on the top of each slice.
