Rocky Road Cookies are a delicious cookie with marshmallow, chocolate, and peanuts all rolled up in the form of a cookie.
These are easy to make drop cookies and taste fantastic. Your family will be asking you for more.
4 ounces room temperature butter
1/4 cup firmly packed dark brown sugar
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup raisins
1/2 cup chopped peanuts
1/2 cup semisweet chocolate chips
1/2 cup miniature marshmallows approximately
Preheat oven your to 375F.
Lightly grease the cookie sheet or line the cookie sheets with parchment paper and set aside until needed.
In a medium size mixing bowl beat butter and brown sugar with an electric mixer on medium speed until light and fluffy.
Next beat in the egg and vanilla until well combined.
Slowly add flour, baking powder, and salt and continue to beat the mixture until blended.
With a wooden spoon stir in the raisins, peanuts, and chocolate chips.
Drop the cookie dough by the teaspoonful’s about 2 inches apart onto the cookie sheets.
Place the cookie sheets into the pre-heated oven and bake for 10 minutes.
Remove from the oven and leaving the oven on.
Lightly press 4 miniature marshmallows into center of each cookie and return to oven and bake for 2 minutes, or until golden.
Remove the cookie sheets from oven.
Allow the cookies cool on the cookie sheets for 2 minutes until set.
Remove the cookies from sheet and place onto a wire rack to cool completely.
Store your cookies in a tightly sealed container.
