Quinoa Banana Bread

Quinoa Banana Bread is so good you will be making it in large batches just to keep up with the demand.

The bananas should be over ripe so that they are nice and sweet.

This loaf tastes so good with morning coffee. It also is very easy to prepare which make it good for bake sales, or farmers markets. Quinoa Banana Bread makes a wonderful as a gift any time of year. Simply wrap it in plastic wrap then cover with a new clean napkin or dish towel. Tie with a pretty ribbon and you are done.

Ingredients:

1/2 cup plus 2 tablespoons quinoa flour

1/3 cup quinoa flakes

2 very over ripe peeled and mashed bananas

1 teaspoon baking powder

2 teaspoons baking soda

1/2 teaspoon cardamom

1/4 teaspoon salt

2 large eggs

2 tablespoons liquid honey

 

Preheat your oven to 400 degrees.

Lightly oil a 9x5-inch loaf pan.

In a large bowl mix the quinoa flour, quinoa flakes, baking powder, baking soda, cardamom, and salt until well combined.

In smaller bowl, mix the mash bananas, eggs and honey until fully combined.

Add banana mixture to the large bowl of dry ingredients and beat until combined and batter has a smooth consistency.

Pour batter into the prepared loaf pan.

Place the loaf pan in the oven.

Bake in preheated oven for 20 to 25 minutes until done. Watch it closely the last five minutes as you do not want it to over-brown.

Remove the Quinoa Banana Bread from the oven and turn out onto a cooling rack.

Once cooled keep covered with plastic wrap to help keep it moist.

This is a great snack for the kids after school, and makes beautiful toast for breakfast. Pack it in their lunch or in your backpack for those long hikes. It is a great way to add more fruit to your diet. The Quinoa in place of flour makes this the perfect gluten free snack. It is also a loaf that goes very well with that afternoon coffee break giving you that little extra boost in the middle of the day. Due to the bananas it is also high in potassium.

This loaf freezes well so make plenty to always have some on hand. Be sure to totally defrost prior to serving.

Serve it with honey, peanut butter, jam, cinnamon sugar, just to name a few. The possibilities are truly endless. Have fun and enjoy this guilt free snack.

May be served warm or cold.
